Carb Smart Living was born from my own health journey—a journey shaped by years of living with autoimmune conditions, including Hashimoto’s hypothyroiditis and damage of the posterior spinal cord nerves, as well as insulin resistance. These challenges pushed me to look deeper into nutrition, metabolism, and the science of long-term healing. The more I learned, the clearer it became that food is not just fuel—it is a powerful tool that can either support the body or work against it.
As my knowledge grew, I realised that I was finally moving in the right direction: taking responsibility for my own health, making informed choices, and creating habits that allow my body to rebuild and regain balance. But this progress came with a personal struggle.
When I transitioned to a ketogenic and lower-carbohydrate way of eating, I quickly discovered two major problems:
I missed bread, and I was not getting enough fibre.
Most keto products on the market were high in fat and low in carbohydrates—but also extremely low in meaningful, functional fibre.
